CRANBERRY TOPPED CHOCOLATE BROWNIES
3/4 cup + 2 tbsp all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1-1/3 cups sugar, divided
1/4 cup + 2 tbsp unsweetened cocoa
2/3 cup water
1/4 cup margarine, softened
1 tsp vanilla extract
1/2 tsp rum extract
3 egg whites
vegetable cooking spray
1 (12 oz) package fresh cranberries
1/2 tsp groun cinnamon
3 tbsp rum
2 (8 oz) cartons vanilla low fat yogurt
1 cup (1 oz) package pre-melted unsweetened chocolate
fresh mint sprigs (optional)
Combine flour, baking powder, soda, 2/3 cup sugar, and cocoa
in a large bowl. Add water, margarine, and extracts. Beat at low
speed of an electric mixer 1 minute. Beat at high speed 2-3 minutes
or until mixture is smooth.
Beat egg whites (at room temperature) at high speed of electric mixer
until stiff peaks form. Fold 1/2 cup beaten egg whites into chocolate
batter. Fold in remaining egg whites. Spoon batter into a 15x10x1"
jellyroll pan coated with cooking spray. Bake at 375 degrees for 10-12
minutes or until a wooden pick inserted in center comes out clean.
Cool brownie completely.
Place cranberries in a 15x10x1" jellyroll pan. Combine remaining 2/3 cup
sugar and cinnamon; sprinkle evenly over cranberries. Stir well. Sprinkle
with rum; stir well. Bake at 350 dgree for 10 mnutes, stirring occasionally.
Cool completely. Spoon yogurt onto several layers of heavy duty paper
towels; spread to 1/2" thickness. Cover with additional paper towels; let stand
5 minutes. Scrape yogurt into a bowl, using a rubber spatula; add ice milk,
and stir well. Cut Brownie into 16 pieces. Spoon 2 tbsp yogurt mixture onto each
individual dessert plate. Place a brownie in sauce on each plate. Place a brownie
in sauce on each plate. Spoon melted chocolate over yogurt mixture in small
circles around each brownie. Pull a wooden pick or the tip of knife continuously
through chocolate cicles surrounding each brownie. Spoon cranberries evenly
over brownies. Garnish with fresh mint sprigs, if desired. Makes 16 serings.
