I like rocky road ice cream and this candy is a delight.
ROCKY ROAD CANDY
2 (12 oz) large packages semisweet chocolate chips
3 tbsp solid vegetable shortening
......(do not substitute butter for shortening)
1 (10-1/2 oz) bag of miniature marshmallows
2 cups coarsely chopped nuts
Line two 8" square pans with wax paper, covering bottoms and
sides of pans. (or arrange 8 to 10 dozen paper bonbon cases
on rimmed baking sheets.)
Place chocolate chips or candy coating in the top of a double boiler.
Add shortening; stir over barely simmering water just until mixture
begins to melt. Remove from heat; stir until completely melted.
Stir in marshmallows and nuts.
Divide mixture between pans, spreading it evenly over pan bottoms;
or drop by rounded teaspoonfuls into bonbon cases. Refrigerate just
until firm. Before serving, cut candy in pans into 1" squares. To store,
cover airtight and refrigerate for up to 3 weeks. Makes 8 to 10 dozen
